On July 2, 2025, Pierre Otuszewski (PhD student at IBSP, UGSF, and MSAP) gave a keynote lecture at the SFSM 2025 Conference in Montpellier, where he presented an innovative multi-omic approach to study cold-induced sweetening (“Cold-Induced Sweetening”, CIS) in potato.
Keynote — Multi-omics analysis of potato tubers using a single extraction method using HRMS
His presentation described an integrated pipeline combining metabolomics and proteomics, based on a single extraction method using MTBE, applied to ten varieties differing in their sensitivity to CIS.
Thanks to FT-ICR MS and LC-MS/MS analyses, several hundred metabolites and proteins were identified, notably revealing an involvement of redox regulation in CIS sensitivity.
These results provide new insights for understanding the mechanisms governing starch degradation during cold storage, and pave the way for the identification of metabolic and protein markers useful for selecting varieties with improved storage stability.
