Holding a Master&#8217;s degree in Nutrition and Food Sciences, with a specialization in &#8220;Innovations in Plant, Enzymatic, and Microbial Biotechnologies,&#8221; he previously completed two internships at UGSF before obtaining a doctoral fellowship.<\/p><p>His research aims to develop an oral administration method for GLP-1 receptor agonists, a class of drugs used in the treatment of type 2 diabetes. These molecules, fragile in the gastrointestinal tract, currently require administration by injection or very high oral doses. To address this challenge, Thibault is exploring two approaches: the production of potatoes synthesizing a starch coupled to the active ingredient, and the manufacture of starch nanoparticles capable of encapsulating and protecting the drug.
